Alternative Facts (Citra-Mosaic-Amarillo IPA)
5 (3) gallons (7% using brewing calculator)
10 lbs (6.3 lbs) 2 Row
16 oz (10 oz) White Wheat
1 lb Flaked Oats
0.5 lb Flaked wheat
6 oz (4 oz) corn dextrose
6 oz (4 oz) crystal 40 (C40 to get more orange color and a bit more sweetness)
Mash at 150-152
0.50 oz (0.3 oz) Citra 60 min
0.75 oz (0.5 oz) Citra 10 min
2 oz (1.2 oz) Amarillo 0 min (hopstand at 180 deg for 25 min)
1.25 oz (0.75 oz) Citra 0 min (hopstand at 180 deg for 25 min)
Dry Hop (may want to dryhop after about 7 days when active fermentation is still ocurring)
2 oz (1.2 oz) Amarillo Dryhop - 5 days
1.5 oz (0.9 oz) Citra Dryhop - 5 days
4 oz (2.4 oz) Mosaic Dryhop - 5 days
1 tsp (0.75 tsp) gypsum
1 tsp calcium chloride (2:1 Chloride to Sulfate Ratio) 100 ppm of each? more chloride than sulfate
(bottled water has 29 mg/l chloride and 6 mg/l sulfate)
Safale 05 yeast
Total Hops for 5 gallons (12 oz)
4 oz citra
4 oz amarillo
4 oz mosaic
Could use Columbus or Apollo instead of citra.
Results:
Brewed on March 5, 2017. Mashed at 149-150 deg. for 90 min (because sparge water was not ready in 60 min). That's OK. Used a total of 10 gallons of water for mash and sparge. Seemed to have plenty of sparge water and dumped out one of those gallons. Still ended up with 8 gallons pre-boil.
Ended up with 5.5 gallons post boil. This will change alcohol to about 6.3%. Used 1 tsp calcium chloride and 0.5 tsp gypsum.
Dryhopped on day 7 while some slow fermentation still occurring. Was really hard to get dryhop sacks into carboy due to amount of hop pellets. Purged headspace with CO2. It is questionable weather all hops made contact with beer throughout dryhopping. They seemed to float more than usual. HAve to split them up into 4 bags and weigh them down.
Kegged after dryhopping for 6.5 days. 5.5 gal turned into 4.75 gal due to residual in bottom and absorption into hops.

Tasting Notes:
Incredible aroma! Very nice.
I'm wondering if I added too much calcium chloride, slight salt profile. Maybe should be 1/2 or 1/4 tsp instead of 1. Would like the dry hops to make more contact text time. Will use marble weights. More creamy than Galaxy. Maybe will get better with more carbonation. Couldn't hurt to use more crystal for body and sweetness. Maybe also sub something for Amarillo. Try a new hop.
Overall, very good with many good compliments.
The hop kick started to fade at about 3 weeks.

Grab Bag O Hops - Session IPA
3 gallons (6.5% abv) (wanted 5 or 5.5%) April 2016
5 lbs 2 row
8 oz white wheat
5 oz carapils
4 oz dextrose (10 min)
4 oz crystal 20
0.5 oz Magnum (60 min)
0.5 oz Goldings (10 min)
0.5 tsp gypsum (10 min)
0.3 oz Columbus (0 min)
2.5 oz Cascade leaf (0 min)
0.5 oz Galaxy (dryhop)
1 oz Simcoe (dryhop)
Safale 05 yeast
Heating wort water in a 5 gallon pot instead of the keggle would make things a lot easier. Sparge watershould be heated in keggle.
Wort was just over 4 gallons at boil and not 4.5 as anticipated. Only yielded 2.5 gallons. Next time heat an extra half gallon sparge water.
Thermometer broke and I had to improvise with a less accurate one.
Dry hopped primary after 10 days. Tried to dryhop with cascade leaf hops, but they seemed to just float on top of beer. Opening in fermentor was too small to but them in a bag.
Kegged after 15 days. Has some kegging issues. The poppet was installed incorrectly.
Flowing great after I reinstalled poppet.
This is a very good beer. A bit on the dry side and needs some more pronounced grain profile. Nice nose. Not my favorite dry hop (simcoe), but this turned out pretty good. Cleared after 4 weeks and hops faded a bit.
